You can begin a New Game+ in Mass Effect Legendary Edition by selecting the 'Import ME2 Character' option. Upon starting, you will retain your current level and have access to all your previously acquired items after the prologue. However, your Morality score (your alignment on the Paragon/Renegade scale), any upgrades you've applied, and all story and squadmate decisions made in Mass Effect 2 will be wiped clean. You will also not receive the Import Bonus that is granted for importing a high-level character from Mass Effect 1.

During a New Game+ playthrough, you have the ability to change your character's appearance. Additionally, you can change your Advanced Training skill at no cost. You are not able to change your character's class or your Advanced Weapons training choice.

Importing a different Mass Effect 1 character or re-importing a completed Mass Effect 2 character generally offers more advantages than importing a completed Mass Effect 2 character into a New Game+. The 25% increased experience bonus available through other import methods makes leveling up very quick. Furthermore, having more resources available saves time in the long run.

For subsequent playthroughs, consider trying a higher difficulty level. Enemies gain increased health, defenses, speed, and deployment strategies on higher difficulties. Certain enemy abilities, like hacks and bypasses, also change slightly, but you will eventually recognize the patterns and they will become less of a challenge.
